1 tablespoon oil
4 large sweet onions (sliced)
1/2 cup water
4 ounces cream cheese (softened)
1/2 cup mayonnaise
1/2 cup parmigiano reggiano (grated)
pepper to taste
1. Heat the oil in a pan over medium heat, add the onions and water and cook until completely tender and caramelized and golden, about 40-50 minutes, stirring every 10 minutes or so, adding more water as needed.
2. Mix everything and place it in a baking dish.
3. Bake in a preheated 350F oven until the top is nice and browned, about 30-50 minutes.
This was sort of a disaster but really delicious. In the future, roll up with both a towel AND waxed paper. Cook the cake until it’s a little too well done and it would probably hold together better. Start out with room temperature butter.
These were perfect as-is. Really only have to freeze the cream cheese for maybe an hour.
Make sure to get buttermilk! Makes 3 layers. Use less sugar in the frosting!! Recipe is too sweet as is (start from ~3 cups to taste)
